Osteria dalla Zabariona was founded in 2021 by Andrea Rondinelli, a self-taught cook and cultural researcher devoted to the recovery of forgotten Romagnol recipes. The approach — rooted in Slow Food philosophy, direct relationships with small producers, and a rigorous respect for seasonal and territorial ingredients — quickly attracted the attention of national food critics and regional journalists alike.
Our wine list, built around DOCG Albana di Romagna, Sangiovese di Romagna and independent winemakers from the FIVI network, received the Spirito Slow award at Slow Wine Fair Bologna 2026 — a prize for the best value-for-money wine selection in the Italian osteria category.
