Rediscovered recipes
Nearly lost dishes recovered through memories, testimonies and Ravenna’s food culture.

Authentic Romagna cuisine · Ravenna historic centre
Not a reinterpretation. Not the usual ‘typical’ menu. At the Zabariona you find nearly forgotten recipes, handmade pasta, Mora Romagnola and artisan wines — a few steps from the mosaics of San Vitale.

Many menus describe Romagna through the same five dishes. Andrea Rondinelli chose the harder path: seeking recipes that survived only in the memories of azdore, reconstructing their gestures and ingredients, and bringing them back before they disappeared.
That is why unfamiliar names — Sucialesta, Curzul and Urciôn — sit beside hand-folded cappelletti, Adriatic fish and Mora Romagnola. Not folklore: precise flavours, identifiable ingredients and stories that continue.

A taste of the Zabariona
The menu follows the seasons and what the territory truly offers. These are some of the flavours that best tell our story.

Your host · Andrea Rondinelli
The Zabariona begins with a simple question: which flavours would we lose if nobody kept cooking them? Andrea searches, meets producers, listens to the azdore and personally selects ingredients and bottles.
It is an osteria in the finest sense: welcoming, curious and generous. It is also a small living archive of the Romagna table.
