The Zabariona cellar follows the same principle as the kitchen: real people, living ingredients and places with a recognisable voice. Romagna is the starting point, never a boundary. Andrea Rondinelli selects small independent growers from Italy and Europe, with particular attention to organic, biodynamic and natural farming.
A list made for the table
Every bottle needs a clear identity, fair value and a reason to sit beside the food. The selection moves from Sangiovese, Albana, Trebbiano, Famoso and Centesimino to grower Champagne, mountain whites, skin-contact wines and low-intervention bottles from across Europe.
People before labels
Among the Romagna references are Fattoria Zerbina, Villa Papiano, Gallegati and Nicolucci. Beyond the region, the list meets growers including Elisabetta Foradori, Radikon, Arianna Occhipinti and Wasenhaus. Names and vintages change; the criterion does not: independent estates, visible agricultural work and wines that retain the character of their origin.
